Chicken Taco Soup

We have been so insanely busy and haven't had time for much. Miss. M turned 6 last week and she kept me hopping all last week. We also had a long weekend this weekend and took the kidlets to Drumheller to the Royal Tyrell Dinosaur Museum, it was fun....it wasn't busy at all. Except for the mosquito's man they are gonna have a huge problem there this year!

So since we had a house full and cooked enough for a small army, we now have ALOT of left overs....So what to make??? Well tonight was....

Chicken Taco Soup


Ingredients
1/2 lb chopped cooked chicken
1/4 cup chopped onions
1 cup water
1 (8 ounce) can Rotel tomatoes with green chili
1 (15 ounce) cans kidney beans, with liquid
1 cup tomato sauce (I used a garlic pasta sauce)
2 tablespoons taco seasoning (I have a homemade recipe that is awesome!)
2% cheddar cheese, shredded (optional)
plain yogurt or sour cream (optional)
avocados, slices (optional)
Directions
Cook onion in medium saucepan over medium heat until tender. Drain.
Mix in water, tomatoes, kidney beans, tomato sauce and taco seasoning. Bring to a boil.
Cover, reduce heat, and simmer for 30 minutes.
Serve topped with cheese, yogurt and avocado slices if desired.

It was delicious and would like to know if you have a recipe like this how is it different??? I would love to try it.
