WW Core - Bubbling Pizza Casserole

Tonights supper looks, smells and well tastes divine!

WW Core - Bubbling Pizza Casserole
Ingredients
    • 1 lb 96% lean ground beef
    • 1 medium onions, chopped
    • 16 ounces tomato sauce
    • 1/2 teaspoon dried basil
    • 3 garlic cloves, minced
    • 1 teaspoon italian seasoning
    • 1/2 cup sliced mushrooms
    • 1/2 cup diced bell peppers
    • 1/2 cup diced tomatoes
    • 16 ounces refrigerated biscuits ( should be 8 biscuits per can)
    • 1 1/4 cups fat free mozzarella cheese, shredded

Directions

  1. Preheat oven to 350.
  2. In skillet, brown meat over medium heat, stirring to crumble.
  3. Stir in onion, tomato sauce, basil, garlic, and Italian seasoning.
  4. Add veggies
  5. Add quartered biscuit dough to the pan of sauce & meat; stir gently until biscuits are covered with sauce.
  6. Spray a 9 x 13" casserole dish with cooking spray. Dump the mixture into the dish.
  7. Bake for 25 minutes.
  8. Sprinkle with cheese, and bake an additional 10 minutes or until biscuits are done.
  9. Let stand 5 minutes before serving.

Here is the only thing I did different (being as girl punk has issues with Tomatoes, I used her favorite pasta sauce - Natural and organic) I subbed the tomatoes with pasta sauce. I added a herb mix instead of the basil and Italian seasoning (cause it is what I had). I also used baby portabella mushrooms too. I like them better as the don't cook down as much and the kids don't notice them as they do with white mushrooms. I also cut back on the cheese. I used a low fat mix of cheeses I used half of what was called for. So next time I may just use left over Mama's Meat Sauce recipe. We had seconds too! Yummmmmy. Keeper for sure.

Menu Plan {January 29th - February 4th}

Well this week was a week that could have ended on Wednesday...Seriously. Yep! Bleck! So our meal plan was pretty much trashed. The boy punk had 2 parties to go to both over supper and both pointless to come home cook and then turn around to go get him.


Monday - Roast Beef (my recipe) in the Slow Cooker and Mashed potatoes Tuesday - Salsa Chicken or Crock Pot Stuffed Chicken or maybe a blend of both! LOL! [both are new recipes] Chicken Strips from our local deli around the corner with veggies.
Wednesday - Grilled Cheese and Tomato Soup (as per the punks request!) Taco Time I had a salad that I shared with Girl punk! (Remember this was our yes this week could be over day!)
Thursday - Thai Chicken and Pineapple [new recipe] Meh!  Not gonna make it again.
Friday - Fishhhhhhhh and fries We had Subway
Saturday - Pizza Casserole [new recipe] Wok Box Took Girl Punk and she fell in love and in a kids meal there is enough for 2 meals for her!
Sunday - Salisbury Steaks with noodles [new recipe] - Yummmmmmy I made these with baked potatoes from Lynn's Kitchen Adventures the only thing is I used grapeseed oil and omitted the cheese. Worked like a charm.

Monday - Pizza Casserole [new recipe]
Tuesday - Chicken Helper Mix dressed up my way!  LOL!
Wednesday - Grilled Cheese and Tomato Soup (lets try this one again!)
Thursday -Oven Baked Stuffed Chicken
Friday - Date Night  - Kids get to choose SUPPER!
Saturday -Cheeseburger Pizza

Sunday - Burgers

Please rememeber that we always have a heeeeeeaaaaappppping portion of some sort of Veg too.  Lately it has been raw veg pretty much every meal.  Tonight tho I made a baby romaine lettuce salad topped with some Costco Greek Salad  [I like my Greek salad non-traditional I am partial to lettuce in my salads!] Each salad had less than a tsp of dressing on it too with no complaints!  This was a rushed meal plan as I was gonna leave it for tomorrow night but this will  do for the week.  I need to get some things cleaned out of my pantry/fridge/freezer this week (and maybe next too!)

So sad no one posted last week for a recipe hmmmffffppppp maybe this week???

Menu Plan {January 23th - 29th}

Well we made it thru another week. With little to no stress (minus the punks health issues! One day they will get a break right???)

So here is the recap....
Monday - Ginger Lime Chicken [Dinner Survival - Sandi Richard]...Yummy no complaints everyone enjoyed it!
Tuesday - Ginger Beef w/ Egg Noodles [Dinner Fix - Sandi Richard)...All but the girl inhaled it.  She thought it was good but not to die for!
Wednesday - Crockpot Spaghetti w/ Spaghetti Squash....basic meal the kids loved the sauce  (Although the crock pot burnt it slightly!)  
Thursday - Slow Cooker Roast & Potatoes  Left overs....Kids had a piece or bread with left over egg noodles topped with meat sauce. Both inhaled it!
Friday - Burger & Fries....We had Wendy's as it was a soccer night and I was in pain my shoulder is buggered again.
Saturday - Thai Chicken Wraps (Mine will be wrapped in lettuce) [Dinner Survival - Sandi Richard].....Yummmmmy and a keeper!!!
Sunday - Oven soft tacos.....only had 1 left over....so I think they enjoyed them!  I have left over chicken from  the thai  wraps taco-ized over some spaghetti squash with pico de gallo (sp?) yumm yumm yumm yummy!

So this week we are keeping it simple as I am still in pain (yes I will be calling about a massage first thing tomorrow am) and well that is the only reason I can think of LOL!

Menu Plan {January 16th - 22th}

Well so far so good we did move some meals around and Sunday (Tonight) was totally changed to soup cause it snowed today and well it was COLD! I am such a wimp! So here is an update from last week....

Monday - Kale & Bacon Rotini (Company's Coming Health Slow Cooker) * Meh! No real flavor had good bones tho! LOL So going to have to change it up with some different spices and ingredients.
Tuesday - Hoisin Slivered Beef with Green Beans and Basmati Rice (Dinner Survival - Sandi Richard) * YUMMMMMMMY! Kids gobbled it up...had a tiny zip to it spice wise so I was shocked they loved it so much!
Wednesday - Grilled Chicken Caesar Salad * Changed to Wendy's Take out Thursday -Oven Tacos (Lynn's Kitchen Adventures) * YUMMY! Going to make it with flour tortilla's next time. Keeper
Friday - Chicken & pineapple Curry with Rice and Balsamic Nutty Beans (Dinner Survival - Sandi Richard) * Yummy yummy yummy....Dad was the only one on the fence...ever one else loved it!
Saturday - We picked up pizza the Boy Punk had a friend sleep over and I had salad and left over curry.
Sunday - Olive Garden Chicken & Gnocchi Soup * YUMMY Yum yum!

Was a crazy week and I hurt my neck some how. So booking a massage appointment tomorrow. So here is this weeks menu....

I hope this is helping someone out there as much as it is helping us!  We had such a stressful week and I was so relieved to have this as one less thing to worry about! So as some know I am working on shedding some fluff!  LOL!  So far this week down 3 lbs not to shabby for just watching the crap I put in my body!!! Wonder what would happen it I started to work out??? I think that is pretty good and hoping to keep it off too!  Hoping to buy an elliptical sometime this week to help! So I can watch the pounds fly offffffff.  Any help and pointers would be super!

Olive Garden Chicken & Gnocchi Soup



So the recipe I have left for you is a combo of two combined. Basically just the spices are different.  The whole family gobbled it up and said please make this again.  WOW so surprised! I am such a soup girl and so happy that Daddy Punk and Kid Punks loved it!  

If you try to make this please let us know what you think or change?  You could totally make it using left over chicken, like Roast Chicken or grilled chicken.

Olive Garden Chicken & Gnocchi Soup


  • Prep Time: 10 mins  Total Time: 35 mins  Servings: 8-10









Ingredients


    • 3 - 4 chicken breasts, cooked and diced
    • 4 cups chicken stock
    • 2 cups half-and-half
    • 1 stalk celery, diced
    • 1 garlic cloves, chopped
    • 1/2 carrots, shredded
    • 1/2 onions, diced
    • 1 cup fresh spinach, chopped
    • 1 tablespoon olive oil
    • ½ - 1 teaspoon thyme & parsley
    • ¼ tsp nutmeg
    • salt and pepper
    • 16 ounces potato gnocchi
    • 1 tablespoon cornstarch (optional)


Directions

  1. Saute the onion, celery, garlic, carrot in oil over medium heat until onion is translucent.
  2. Add chicken, chicken stock, half and half (add cornstarch in half and half at this point if you want a thicker soup.), salt and pepper, thyme. Heat to boiling, then add gnocchi. Gently boil for 4 minutes, then turn down to a simmer for 10 minutes.
  3. Add spinach and cook for another 1-2 minutes until spinach is wilted.
  4. Ladle into bowls and serve!

Menu Plan {January 9th - 15th}

We survived our first week of meals and with a few changes it all went well! Thursday was moved back to the files and days were bumped so we could have fried hotdogs on Friday. Just like Five Guys but way better!

Recipes will follow if they are good.  They are all from cookbook I just recently took from our local public library. Also Friday may change as we have soccer at 6pm.  SO we will see how the week goes!

Well off to bed soon as I will be up early doing a power walk before the kids get up!  YIPPY!

Well 2012 is going smoothly

Well Monday's meal of Bacon Spaghetti was a hit...Miss Picky pants who I thought we would have to fight to get her to eat it had 2 helpings.....yes 2 helpings!!! Then both kids asked for it for their lunch for today. Mr will Eat Anything is under the weather and didn't touch his but that was ok.

Yesterday I got to make a meal plan/shopping clipboard. It is super cute and was super quick to make and super cheap. 2 pieces of scrapbooking paper (one was .79 and the other was $1.69 I think), a dollar store clipboard $1.25, Modge Podge (already had at home so pennies) and paint (again had at home pennies)


 How cute is that hanging on my kitchen wall!  going to be even more cute in my shopping cart!
 In case you didn't know I Love me some sock monkey!  LOL!  Also did you know you can Modge Podge ribbon???  I didn't but it totally works!  SWEET!
So while at the dollar store I found some plastic sleeves that are open on 2 sides and sealed on 2 sides.  I think there are 12 in the pack for 1.25 not bad.  Seem to be good quality too.  So my plan was to put the menu plan in and then with wet erase markers mark off my groceries.  So far it seems pretty good!


Day 2 Supper Sausage and Potatoes....another keeper.  Only thing I changed added fried onions and orange peppers also fried the sausage a bit add something I like the crispy bits!.

So how is your new year going?  Baby steps like us???

Happy 2012 Menu Plan {January 2nd - 8th}

Well here it is 2012 and can't for the life of me remember the last time I posted here! Well I am back and first order of business is meal plans/menu plan. I have done a plan when the kids were smaller and since they have gotten busier so have I and so I have let thing slide.

Well with a new year and a new job (I started at the beginning of December) many new things will be changing in our house! 1. Menu/meals 2. Chores 3. Housekeeping 4. Selling (Stuff we out grow or do not use anymore!) 5. Decorate/organize (I know they don't seem to fit together but just go with it!) So those are my top 5 for now.

So a friend facebooked (is that a word?) me asking what my plan is. So here I go.... I do a 6 day plan and its not set in stone...flexibility is the name of the game....one day to either eat out or to have left overs. 
These are all new to use recipes (except Sunday) too so I am sure some will stay some will go!

I am also using this sheet for the first time as well. I think it will work quite well I may even laminate it and use erasable marker (you know the kind you need water to remove not dry erase ones!) Then it will be good to use over and over and I can take it shopping and it won't get destroyed.
